What the proprietor says

Cookery has perhaps never enjoyed such a high profile as it does today. As you know it is difficult to turn on the television without seeing programmes of either cookery for entertainment, cookery competitions or cookery designed to teach. This is in addition to the constant stream of new cookery books available to us. Sadly in our view this is also a time when opportunities to develop good cookery skills are diminishing. Cookery is not regularly taught in schools and the widespread availability of ready-made convenience foods reduces the incentive to learn to prepare and cook it ourselves. We have lost our love for handling raw ingredients and creating imaginative and appetising dishes.

Our aim at the Gables School of Cookery is to enable our students to leave whichever course they have chosen with the confidence, and know-how to develop and build on all the skills they have acquired so that they can create their own style of cookery.

Since the beginning of time food and its preparation has constantly changed and adapted as new places have been discovered, new styles of cookery has been identified and new ingredients introduced. A bewildering, yet exciting array of ingredients is available to us all today, but it's worth remembering what we consider exotic is commonplace elsewhere in the world. What would a few years ago only have been available in specialist shops is now readily available. We will teach you how to select the best ingredients and how to use them in a wide range of recipes. We will provide you with the skills to feel confident whether cooking for family, entertaining or cooking for a living.

We plan to teach you to prepare classical, contemporary and International dishes. Our longer course is designed to give you a good grounding and thereby enable you to work in the industry. We make full use of fresh, natural produce and use as little convenience food as possible. Where convenience food is used an explanation will be given as to why it makes sense to use it.

Above all our aim is to ensure you benefit from your course and leave us with the enthusiasm and knowledge to continue to develop your skills.
